Black Beans & Veggie Burrito


First off, I'm a huge fan of black beans. When I make Mexican food, I always end up adding them to the dish... so I thought why not make black beans the main star of the meal. I was very happy with the end result and Jim ate 2 burritos. I did find the recipe on allrecipes.com but I made some extra additions. I will defiantly make this recipe again!! Enjoy!!

This recipe will make you 6 big burritos. As you can see, I loaded mine up :)

Ingredients
2 tablespoons vegetable oil
1 small onion, chopped
1 green pepper, chopped
minced garlic
2 (15 ounce) can black beans, rinsed and drained
½ teaspoon of cumin (add more if you like some heat)
½ teaspoon of chili powder (add more if you like some heat)
minced jalapeno peppers
1 can of mild green chilies
3 or more ounces of light cream cheese
1/2 teaspoon salt
1 diced tomato
chopped fresh cilantro
1 Avocado, chopped
Tortillas – I used spinach & veggie flavor.
Salsa

Directions
1. Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic, jalapenos and green chilies in skillet, cook for 2 minutes stirring occasionally. Pour beans, cumin, chili powder into skillet, cook 3 minutes stirring.
2. Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro and diced tomato into mixture.
3. Warm tortillas in the microwave. (15-20 seconds)
4. Spoon mixture evenly down center of warmed tortilla, add avocado & salsa. Roll tortillas up. Serve immediately.
